And by world famous, I really mean: it’s been a HIT at every summer barbecue I’ve been to this summer!
It’s also extremely quick and easy to throw together, and very healthy! All you need is a spiralizer. You can find handheld ones on Amazon or in stores for just a couple of bucks, but I recommend the KitchenAid (if you have one) attachment! It makes getting “zoodles” and other vegetable noodles so much easier. The handheld ones can be hard on certain size/shaped vegetables, and never worked on cucumbers for me (they were too watery and would just fall apart).
With a higher quality spiralizer, the machine does the work for you and can make noodles out of anything!
The other requirement (well, recommendation) is making your own dressing for this recipe. I stopped eating and buying traditional dressings several years ago. The highly-inflammatory and gut-busting oils found in those dressings can turn vegetable-dense salads into unhealthy gut bombs quickly. Canola, soybean, and other flavorless (and nutrient-less) oils cause more harm than good in our bodies and should be avoided, especially whenever you’re eating and making a meal at home (when you can fully control what you’re putting in your body).
When I learned this, I realized how EASY it is to make your own dressings out of healthy oils, like olive and avocado oils! This dressing is also extremely delicious and addicting – you may want to double the batch and store some in the fridge for other salads, or as a marinade for chicken!
This recipe takes less than 15 minutes to whip up. I do recommend storing in the fridge for at least 1 hour before eating, though. It tastes way better when the vegetables soak up some of the vinaigrette 🙂
World Famous Zoodle Salad Recipe
Ingredients:
1-2 Zucchinis (Spiralized)
1-2 Summer Squash (Spiralized)
1-2 Cucumbers (Spiralized)
1 Red Onion (Sliced)
1 Package of Grape Tomatoes
1 Cup World Famous Lemon Greek Viniagrette
World Famous Lemon Greek Vinaigrette Recipe
Ingredients:
3/4 Cup Avocado or Olive Oil
2-3 TBSP Super Gyro Primal Palate Spice Blend*
Juice of 1 Lemon
Splash of Balsamic Vinegar
Instructions:
1. Make Lemon Vinaigrette – just add all ingredients in a bowl or cup measurer and shake or stir to mix
2. Add all the ingredients in a big bowl and mix together
3. Refrigerate at least 1 hour before serving
4. Enjoy! 🙂
