Ginger has been one of my latest obsessions.
I add it to smoothies. To marinades. To oats. To baked goods.
And now – to dressing.
I saw a carrot ginger dressing on the menu at a restaurant and just had to try one for myself.
I made an asian marinade for grilled chicken last night and luckily had all the ingredients around to make this dressing for an asian salad.
Carrots, Shallot, Ginger, Cayenne, Coconut Aminos, Balsamic Vinegar, Sesame Oil, Olive Oil. That’s it!
I was so happy with how it turned out and wanted to share a healthy dressing recipe to add to your mix. (Doesn’t everyone have a salad daily and need to mix it up a bit?)
I like my dressings thicker and creamier so if you need to adjust based on your preferences, feel free!
CARROT GINGER DRESSING RECIPE
Ingredients:
2 carrots, peeled and diced
1 small shallot diced
1 knob of ginger, peeled and diced (you choose the size!)
1 TBSP Balsamic Vinegar
1 tsp sesame oil
2 TBSP coconut aminos (I use Thrive Market brands)
2 TBSP olive oil
Cayenne / Red pepper flakes to taste
Instructions:
1. Throw it all in a high speed blender
2. Taste test and adjust as needed 🙂 If it’s too thick, add more oil or some water!
